The new book, The Receipe Project: A Delectable Extravaganza of Food and Music does a lot of great things, not the least of which is take great recipes from some of the country’s best chefs and put them to music. One of the more interesting recipes in the book/ cd is from Chris Cosentino, the master of all things offal. He’s taken all the part of the animal from the snout to the tail that most chefs are too afraid to touch and he’s built a lifestyle around them.
